Mojo Black Bean Egg Rolls

I’m going to be very honest, I’m one of the laziest people I know so I love any recipe that takes minimal effort and minimal ingredients. Aside from the 7463541 seasonings I throw into every recipe, there’s only 4 major ingredients to these egg rolls. I’ve been trying to get creative with  vegetarian essentials,  like black beans, and throwing them inside an egg roll wrapper seemed like a good idea, and it was. These would make really good appetizers for a dinner or you could make them for a light lunch. Either way they’re enjoyable and I hope you like them.

Ingredients

Makes 8 egg rolls

  • 1 15.5 ounce can black beans

  • 1 bag frozen vegetables

  • 1 pack egg roll wraps

  • ~ 1 cup any neutral frying oil

  • ¼ Cup mojo

  • ¼ tsp Salt

  • ¼ tsp Black pepper

  • ¼ tsp Garlic powder

  • ½ tsp Adobo

  • ¼ tsp Paprika

  • ¼ tsp Sage

  • ¼ tsp Onion Powder

Steps

  1. Sauté veggies and black beans in a large pan and add seasonings.

  2. Add mojo once veggies are tender and take off heat after about 7 minutes.

  3. Add two tbsp of sautéed mixture to egg roll wrap.

  4. Fry in about ½ inch of a neutral oil (I used sunflower oil) until golden brown and crispy on each side (about 2 minutes)

  5. Enjoy with your favorite dipping sauce!
